About the chef –
Hailing from the city of Tequila in Guadalajara, Mexico, Chef José Alfonso Rodríguez Portillo obtained a degree in Gastronomy, and began his culinary career in 2005 right in his hometown, working his way up to a prominent supervisor level after three hardworking years at the highly-rated joint, Guajes Grill. His experience grew as he travelled around Mexico, managing popular bakeries and curating a variety of restaurant menus before stepping back into the kitchen as Chef de Partie at Zambuka Bar and Grill. After two more years of branching out into hotel bars and restaurants, Chef Rodríguez joined Hong Kong’s Mojo Nomad team, creating an authentic, unbeatable menu filled with both traditional and modern plates at TQM.
