The expanded gastronomy series this year brings to life how both the craftsmen at The Balvenie and MICHELIN Guide chefs have stood the test of time, and poured their hearts and passions into creating something extraordinary. This series includes a total of 6 restaurants in Singapore, inclusive of perennial favourites like Braci, Shisen Hanten and Burnt Ends.
About The Balvenie X Thevar:
The Balvenie and Thevar share the same philosophy in terms of craftsmanship as both share the same passion and attention to detail. Chef Thevar calls the pairing of whisky and Indian food a “match made in heaven” and he brings this to life with his two handcrafted dishes paired with The Balvenie. The main dish is a tandoori rack of lamb with herbs chutney, tarragon raita, and lamb fat rumali roti and is paired with the The Balvenie Doublewood 12, which is served neat. For dessert, Chef Thevar adds his own personal twist to a classical Bengali dessert called rasmalai, by infusing it with saffron, cardamom, and The Balvenie Caribbean Cask 14, which has sweet, creamy toffee notes. He especially enjoys how he gets a molasses note in the end, which goes with the dessert. To go with the rasmalai is a ghee cake with milk powder, similar to the texture of a gulab jamun, and served with cinnamon ice cream and a
saffron cloud.
From 5 November till 7 December 2021, diners can enjoy the handcrafted pairings at Thevar which is located at 9 Keong Saik Rd., Singapore 089117. The two dishes are part of the restaurant’s dining menu and available at $278++.
