The exclusive Gula Melaka Petite Cake ($20++, 200g) is a light pandan chiffon sponge cake layered with an aromatic gula melaka filling of coconut flakes, gula melaka and coarse sea salt, as well as fresh Chantilly cream. Toasted coconut shavings are added to the top of the cake for nutty notes and added texture.
Also specially created for the occasion, the Ondeh Ondeh Cupcake ($6++) encapsulates all the flavours of the well-loved local snack. At the core is gula melaka encased in a dark chocolate truffle shell, and the cupcake is topped with a pandan frosting made with white chocolate, coconut milk and pandan. The finishing touch is a generous coating of fresh coconut shavings. A petite version of the cupcake is exclusively available as part of The Marmalade Pantry’s signature afternoon tea set ($54++ for two persons) ensemble, that is only available at the Downtown and Novena outlets.
