For spring 2022, Fat Cow welcomes the blossoming season with a limited-time Haru Matsuri special, presenting three a-la-carte options and a larger spring-themed omakase for a limited time from 23 March to 15 June. From 11 April, Fat Cow also offers limited-time cocktails, with partner Roku Gin, specially for Haru Matsuri.
Treat yourself to the delightful Hotaru Ika Tempura ($22++), featuring a returning ingredient, the eponymous, highly seasonal hotaru ika or firefly squid, served tempura-style. With a unique preparation method where only the legs of the firefly squid are battered, it offers a variety of textures and deeper nuances in flavour.
Accompanying it is the return of hamaguri or hard shell clams. The Hamaguri Sakemushi ($36++), features mouth-watering sake-steamed hamaguri with seasonal hana wasabi on the side.
Savour the new spring creation, the flavourful Takenoko Seri Ae ($25++), that presents bamboo shoots boiled with dried peppers, rice, dashi and tossed in a mix of sansho peppers, salt and miso sauce.
In addition, Fat Cow also refreshes the Chef’s Table Omakase to include the seasonal produce with additions such as the Hotaru Ika Tempura, Hamaguri Sakemushi, Takenoko Seri Ae, and Kinmedai Sakasioyaki no Soramame Soup.
