Preludio × Il Borgo

On 17 October 2019, Preludio will welcome balsamic producer Cristina Crotti of Il Borgo del Balsamico for a one night only 8-course degustation dinner @ $238++ per person. The menu will showcase the use of Il Borgo’s award-winning range of balsamic vinegars and condiments in exciting ways, piquing the imaginations of diners on how the complex flavours of this Italian nectar can be amplified and extended across savouries, pastry, and beverages.

 

In this dinner, Chef Fernando and Cristina will work in tandem to interpret Preludio’s prevailing Monochrome chapter featuring Il Borgo’s range of balsamic vinegars. Apart from new creations, the menu will also feature La Cortina – now a signature at Preludio – where butternut squash agnolotti is drizzled with Il Borgo’s traditional 25 year old balsamic vinegar.
