For the 6th episode of #ThePreludioMovement on 25 November 2019, Chef Fernando Arévalo of Preludio and Chef Shigeru Koizumi of Esora will meld their culinary approaches into a multi-course degustation dinner menu.
A graceful interplay of light and colour, the food at Esora is a reflection of the restaurant’s namesake, which means “painting in the sky”. An affinity for nature, combined with a fresh and lively approach to Japanese cuisine and thoughtful attention to details sees Chef Koizumi presenting micro-seasonal, modern Japanese dishes that are as vivid and ever-changing as clouds in the sky.But the dark side beckons as dawn turns to dusk on a non-starry night.
#ThePreludioMovement is a series of dinners inviting chefs and diners to redefine the boundaries of their imagination, stepping away from what they know to discover the infinite nuances that can exist within a certain theme. The past few months have seen Chef Fernando collaborating with various chefs who have each interpreted Monochrome, Preludio’s current chapter, in their own way. Now, in partnership with Chef Fernando, Chef Koizumi will express the colours of nature – in monochrome.
Albeit serving two very different cuisines, both chefs are known for an uncomplicated culinary sensibility that belies their deft artistry and understanding of the finest ingredients. At this exclusive dinner, guests can expect an elegant expression of nature using produce at the height of their season. Both chefs will also showcase brand new dishes borne from mutual inspiration – the driving force behind #ThePreludioMovement.
Against the backdrop of Preludio’s prevailing chapter, Chef Fernando and Chef Shigeru will set the dark night ablaze with their spirit of discovery matched with imagination.
