The first Supper Special of 2019 at Le Binchotan will debut a special programme within the Supper Special — aptly titled Jeremmy & Friends.
Sam Chablani, formerly of Fat Lulu’s, marks the midway point with his #noburnnotaste Platter, which comprises slow-grilled charred chicken wings, a secret indulgence; Sam’s Phu Quoc Pork Ribs, a brand-new creation; and his Iberico Pork Sataytay, a favourite from his Fat Lulu’s days. The small plate he presents is Vegetable Chips: market-fresh vegetables, finely sliced by hand, and fried fresh batch by batch before being drained for a whole day.
Alongside, Jeremmy presents Hokkien Mee, paired with his wicked housemade sambal; as well as Beef Short Rib Dumplings with hand-shredded Angus beef short ribs braised for 16 hours in Japanese vinegar and served with housemade la yu or chilli oil.
