Exclusively on 31 October, indulge in an exquisite night of contemporary Italian food and wine with a four-course dinner at Zafferano paired with fine red wines from Fattoria Garbole. Brothers Filippo and Ettore Finetto, the founders of Garbole, started the small boutique winery with a philosophy of respecting Veneto and Veronese wine traditions as well as modern technology to produce quality wines.
Whet the appetite with a selection of canapés paired with a refreshing NV Barone Pizzini Animante Franciacorta, made in the méthode champenoise.
The Garbole journey commences with a full-bodied Heletto Rosso Veneto 2013. Considered as a “little” Amarone, the dry red is served with a flavourful roasted foie gras with chestnut, brussels sprouts, and bergamot. Relish the primi course of beetroot and venison tortellini with leek flowers and truffle essence, complemented by a refined Hatteso Amarone della Valpolicella Riserva DOC 2011. The excellent vintage delivers intense aroma perfumed with ripe fruits, and layered with spices and aromatic herbs.
The dinner continues with a succulent A4 Kagoshima wagyu beef with sesame, burnt capsicum and girolle mushrooms. Accompanying the main course is the highlight of the evening – Hurlo Rosso Veneto 2012, a limited edition so rare and treasured that each numbered bottle comes with its own certificate of authenticity. The majestic wine is an expression of the best selections of Corvina grapes, known as the queen of the Veronese red grapes, as well as native Veronese grapes that are meticulously dried for four months, then aged in new oak barrels for at least five years.
For desserts, savour a play of textures with hazelnut, espresso, mascarpone, and caramel, paired with the Hestremo Recioto della Valpolicella 2011, a sweet Italian red wine that is one of the oldest types produced in Italy.
