Wine Pairing Dinner with Xanadu Wines

For one night only, enjoy a special wine pairing dinner with Xanadu wines hosted by its winemaker, Brendan Carr. A true pioneer in Margaret River, Xanadu wines is known for its long history of producing wines with distinct character that embody all that is of the region. Winemaker Brendan Carr will take you through wines from Xanadu’s various vineyards, and expound on Xanadu’s winemaking philosophy that interacts with a deep respect for the land. Savour a select range of wines such as the Xanadu Cabernet Sauvignon 2014 and Xanadu Exmoor Chardonnay 2017, paired with modern European dishes prepared by Culina at COMO Dempsey’s Executive Chef Timothy de Souza and his team.


About Winemaker, Brendan Carr:
As a Southwest Western Australian native, Brendan turned naturally towards Margaret River’s vineyards when he realised that professional surfing was not the career trajectory for him. A desire for more led Brendan outside of Australia, where he chalked up experience as a travelling winemaker assisting in the production of vintages, gaining viticulture experience in both old and new world wines. Joining Xanadu in 2012, Brendan has since been recognised in his field, appearing as a regular Australian wine show judge across the country, and even receiving an invitation to the prestigious Len Evans Tutorial in 2018.
