The gastronomic five-course experience opens with an indulgent Black Pearl Oyster and a rich Scallop and Uni Risotto; the renowned aphrodisiac is garnished with Dashi, Caviar and Fuji Apple, while the creaminess of the risotto is deftly balanced with refreshing cucumber and citrus notes. The pinnacle of the feast sees the championing of premium ingredients such as the melt-in-your-mouth sake-glazed Alaskan Cod, paired with pumpkin, sage, and hazelnut, and the Wylarah Wagyu Strip with Kombu, Shiitake and Black Truffle.
Inspired by two symbols that have become synonymous with the occasion, the intricate Chocolate Brownie dessert with pickled cherry, meringue and raspberry ripple features Ruby Chocolate, the first new variety of chocolate in 80 years. Savoury delights of a colourful five-course menu have been thoughtfully designed for vegetarians. The vibrant menu highlights the season’s best including the flavourful Roasted Cauliflower topped with Spiced Dates, Black Truffle and Hazelnut and the Confit Fennel with Mozzarella, Blood Orange and Charred Radicchio.
The dedicated cocktail offering in February includes exceptional twists such as My Funny Valentine, featuring Codigo Rosa tequila, lychee, vanilla, rose, lime and clarified milk, cleverly concocted by Rusty Cerven, SKAI’s beverage manager.
SKAI’s Valentine’s Day five-course set dinner menu will be available from 13th to 15th February at $248++ per person, including a glass of Champagne.
