The dark side lures yet another down its path. Known for his use of bright flavours and colours in his plates, the young and spirited Chef Carlos Montobbio of Esquina now rises to #ThePreludioMovement’s challenge of cooking in black and white.
In this one-night only collaboration happening on 1st July 2019, Chef Carlos Montobbio brings his finesse in contemporary interpretations of Spanish and Catalan flavours to Preludio. Together with Chef Fernando of Preludio, the duo will serve up a dynamic 8-course degustation menu ($238++ per guest) showcasing the season’s peak produce, all while working within the realms of Preludio’s current Monochrome chapter.
About The Preludio Movement:
The Preludio Movement is a series of one-night only dinners happening at different points along the year. Visiting chefs are given full rein to interpret Preludio’s ongoing chapter in their own way, cooking alongside Chef Fernando. The movement aims to encourage chefs to step away from what they know, embracing the creative liberation that flourishes within boundaries.
