Relish the season’s harvest of white asparagus at Restaurant Gaig. The much-anticipated spring delicacy is prepared by Executive Chef Marti Carlos Martinez in the a la carte special – Charcoal grilled white asparagus and romesco sauce (2 pieces; $22++). This year, the restaurant’s white asparagus is sourced from Holland.
At Restaurant Gaig, Chef Marti grills tender spears of white asparagus over charcoal and serves them with housemade romesco sauce and microgreens. In Catalan, romesco sauce is traditionally served as an accompaniment to grilled vegetables. The sauce comprises of garlic, tomato, bread, sherry vinegar, nyora peppers, toasted almond and hazelnut. The dish is available until the end of the season.
