On 19 January 2023, Restaurant Gaig celebrates the homecoming of Carles Gaig – award-winning chef who brought industry recognition to his 120-year-old family business by dedicating his life to the preservation of Catalonian traditional recipes while forging new and innovative gastronomic experiences.
For one night only, experience an immersive culinary experience showcasing a 6-course dinner menu ($180++ per guest) featuring Chef Carles’s favourite dishes from Restaurant Gaig Barcelona, refined through the lens of Executive chef, Marti.
A rich Cauliflower royale with black truffle is served to begin the evening, expertly prepared to achieve a creamy consistency. This is followed by Carabinero prawn carpaccio, avocado, corn, apple and caviar, a symphony of flavours inspired by Carles’s signature dish – trio of seafood tartare.
The main course features Veal head, tripe and leg with chorizo and chickpeas. The traditional head-to-tail recipe encapsulates flavours dating back to more than a century ago. The evening ends with a dessert, paying homage to the winter fruit, Mandarin orange. Carefully crafted in various iterations – sorbet, sponge and fresh segments, topped with persimmon gel to deliver a contrasting flavour to the citrus treat.
