Candlenut at COMO Dempsey welcomes Sarsá Kitchen Philippines for a one-evening only four-hands dinner that celebrates the rich culinary histories of Peranakan and Kabayan (Filipino) cuisines.
Happening on Monday, 19th August 2019 from 6pm onwards, this four-hands dinner will see Chef Malcolm Lee of Candlenut at COMO Dempsey and Chef JP Anglo of Sarsá Kitchen Philippines showcasing a menu comprising signature dishes from both restaurants, whose flavours underscore the similarities across Peranakan and Kabayan cuisines.
As Chef Malcolm shares, “When I first tried the food at Sarsá Kitchen. I was fascinated by how there were common flavours across both Peranakan and Filipino cuisine, but created by entirely different ingredients. For example, I found the sour and savoury Filipino stew Sinigang very similar to the salted vegetable Kiam Chai soup we have, except that while Filipino cuisine uses tamarind to create that sour tang, Peranakan cuisine uses sour plum, assam skin, and salted vegetable to do so. At the same time, some Filipino and Peranakan dishes may use the same ingredients, but each in their own unique ways, and the result is entirely different flavour profiles.”
Diners can expect a dynamic menu that showcases the synergistic flavours of Peranakan and Kabayan cuisine. Highlights include starters of Lechon Sisig Tacos and Buah Keluak Satay; mains such as Pancit Palobok, Itek Tim Soup, Kare Kare, Chicken Binakol and Crispy Pata; and desserts like Candlenut’s well-loved Kueh Salat, Chendol, and Sarsá Kitchen’s Banana Turon. Dishes will be served communal style with Sarsa Kitchen’s ‘Special Garlic Fried Rice’.
The Candlenut X Sarsá Kitchen Philippines Four-Hands Dinner will take place on Monday 19 August 2019, at Candlenut in COMO Dempsey Singapore. The first seating will take placefrom 6pm to 8pm, and the second seating from 8:30pm onwards. The tasting menu is priced at $138++ per person, with a beverage pairing option at an extra $68++ per person.
