Binary Celebrates Its 1st Anniversary

From 20 November to 4 December between 12pm to 3.30pm, the gastro bar features a stellar line up of accomplished foodie friends to helm the kitchen:

• Chef Nobuaki Hirohashi (Ushidoki Wagyu Kaiseki) and F&B consultant Lawrence Yeow on 20 November;
• Chef Akane Eno (Ichigo Ichie) on 27 November;
• Chef and writer Joycelyn Shu on 4 December.

Each guest chef’s menu ($60++ per person) presents a curation of dishes executed in their creative flair guided by Binary’s signature approach of Asian and Western culinary style.

On 27 November, savour authentic Japanese flavours presented as konbini-inspired dishes by Chef Akane Eno of Ichigo Ichie.
• Croquettes are served in Binary’s signature style. The Japanese snack is filled with Hokkaido potato, uni and smoked scallop, while the Western rendition offers Spanish flavours with chorizo, dried tomato, and mozzarella cream.
• It is followed by a comforting Oden – a Japanese one-pot dish consisting of daikon, quail egg, and housemade ika shinjyo.
• Truffle Oyako Don highlights tender pieces of slow-cooked chicken and Japanese egg served on a bowl of rice and topped with truffle.
• For desserts, delight in Japanese Sweet Potato served with Hokkaido Blue Sea Salt Ice Cream.
