A Mother’s Day Menu for the Mamas in Chef Andrea’s Life

Celebrate this Mother’s Day with an exclusive menu at Zafferano, inspired by Head Chef Andrea De Paola’s deep affection for three maternal figures in his life. The first course of melanzana is dedicated to his late grandmother, a classic parmigiana dish she cooked almost every weekend.

To his mother’s unwaivering faith in his culinary pursuit is the flavoursome spaghetti with rich monk fish ragout and peppery rucola pesto. And to his mother-in-law, cacciucco alla livornese, a merluzzo comprising black cod, confit scampi and saffron cacciucco made with a luscious seafood bisque.

 

Dessert is a union of two decadent Neapolitan desserts, grandmother’s favourite babà combined with flavours of pear and ricotta cake, his mother and mother-in-law’s favourite.

 

Savour these meaningful tributes to maternal love with four courses of heart-warming Italien dishes at Zafferano, exclusively available for lunch on 7 and 8 May, and for lunch and dinner on 9 May 2021.
