A Delicious Duet of Love at Path

This Valentine’s Day, express your love and admiration for that special someone with Path’s occasion- exclusive menu. Available for dinner on both 13 and 14 February ($378++/couple), Path presents a delightful dining experience, brimming with luxurious ingredients in matching duet courses – a playful nod to the couplehood. This particular menu is almost entirely French; after all, who speaks the language of love better? 

Chef Marvas presents two seafood dishes that comes as a perfect pair – Duet of Ocean Trout. The Confiture of Petuna Ocean Trout features the luxurious Petuna Ocean Trout from Australia that boasts a creamy and velvet-like texture with every bite. Meticulously prepared, the fish is first cured in salt and sugar before being slow-cooked and delicately wrapped in a layer of salmon that was separately cured in charcoal powder. 

Coupled with this dish is the Ocean Trout Tartare. Chef Marvas does his own take using the same fresh Petuna Ocean Trout, chives, shallots, lemon and olive oil for a flavour that is surprisingly light and easy. A delectably savoury dashi ice cream sits atop the tartare and is made with a flavourful house-made dashi that has been reduced and mixed with kombu. To finish, the tartare is served with fresh slices of pomelo, orange and lime zest to refresh the palate.
