For one night only on 30th August 2020, imbibe in a Ruffino wine pairing along with 5 courses of contemporary Italian fare at Zafferano.
Founded by the Ruffino cousins in 1877, Ilario and Leopoldo, Ruffino has established a reputation for being a pioneer in the terroir-driven Chianti. Drunk and favoured by the Duke of Aosta himself, Ruffino became the official wine supplier to the Italian royal family; and the rest is history.
Whet your appetite with a juicy and citrusy NV Prosecco DOC and a selection of canapés to start the night. The appetiser of Mazara del Vallo red prawn, served ‘crudo’, with luscious cured foie gras and nori seaweed is served after, paired with the lively 2018 Lumina Pinot Grigio delle Venezie IGT.
Braised guinea fowl ravioli with green peas and shallot jus is complemented with a refreshing 2016 Lodola Nuova Vino Nobile di Montepulciano DOCG, boasting a smooth and well-rounded structure with rich aftertastes of plum and tobacco. The meal eases into a main course of Black Angus beef sirloin, with hazelnuts from Piedmont and girolle mushrooms – the perfect accompaniment to the 2015 Gran Riserva Ducale Oro Chianti Classico Sellezione DOCG. Delicate and persistent tannins balance the succulent sirloin, while fruity aromas and spicy notes of cocoa and cinnamon amplify the nuttiness of the dish.
End of your night with a zesty and fruity coconut and Amalfi lemon millefoglie with Japanese strawberries. The 2019 Moscato d’Asti DOCG pairs well with refined effervescence, and distinct notes of orange and peach blossoms.
The Ruffino Wine Dinner is available at Zafferano on 30 August 2020, at 7pm, at $128++ per person and an early bird price of $108++ per person.
