NEW! Chef Otto Weibel unveils White Marble, his loving tribute to the Mediterranean

Opening on 21 February 2022 at Orchard Rendezvous Hotel, White Marble celebrates the Mediterranean, the region of the world that Chef Otto has loved for much of his life.

White Marble brings together the timeless flavours of the countries bordering the Mediterranean Sea, including Spain, Portugal, France, Italy, Greece, Morocco, and the Middle East. As Chef Otto conceptualises the immersive menu, his protégé Executive Chef Kenneth Loke brings it to life on the plate. The olives, spices, beans, vegetables, seafood and meat tell of the bounty of the Mediterranean littoral and the freshness and quality of its produce. And in line with Chef Otto’s philosophy, dishes are prepared with fresh quality produce, using simple techniques that showcase the natural flavours at their vibrant best. The grill section, especially, features a selection of premium vegetables, seafood, and meats seasoned and grilled to perfection in the charcoal oven.

Long regarded as a father figure, Chef Otto’s lifetime work within the industry has made him one of the most respected figures in Singapore Gastronomy. It is therefore natural that he intends White Marble as a platform and launch pad for young chefs. Under the mentoring eye of the elder chef, Executive Chef Kenneth Loke will lead and coach a team of aspiring chefs, and nurture the next generation of gastronomic talent. Together with the service team, an inviting home for social bonding over Mediterranean flavours will be born.
