Spicing things up at W Singapore – Sentosa Cove, Indian Chef Ashok Kumar Solanki celebrates Deepavali with his modern interpretation of traditional Indian fare, showcased in two specially curated three-course set menus that will be available at the kitchen table from November 1 to 14, 2021.
Chef Solanki’s Eat Spice & Curry On set menus feature reimagined creations of classic Deepavali recipes that will take the taste buds on a gastronomic journey through Northern India.
Ring in the Festival of Lights with a soul-satisfying feast by diving right into main courses such as the tender pieces of Handi Rogan Josh (lamb shank in spicy onion tomato sauce), slow-cooked to perfection for its fall-off-the-bone tenderness, and paired perfectly with pillowy soft Assorted Indian Bread (naan), that are best enjoyed on its own for dipping or brushed with garlic, butter, and cheese. Light it up with favorites from the tandoor such as Malai Murgh Tikka (cheesy chicken cooked with Indian spices), smothered with melted cheddar cheese for that mod-Indian touch. And just for the sweet tooth, indulge in Chef’s Chukandar Halwa (shredded beetroot, milk, and nuts), blitzed with lashings of orange zest for a tangy hit of flavor.
To end off, raise a glass to the Patiala Peg traditions from Punjab, and keep the celebrations going with a thirst-quenching tipple from the Patiala Flight (SGD35++) menu; featuring a choice of either whiskey, rum or vodka-based drinks.
